As a newish player who is a lore enthusiast in any game I play, I love theorizing. But I think in this case the simplest answer is the true one. Joels dad is alive. Albedo and Subject Two fought but in some way or another managed to reach an acceptable agreement. Personally i think that fits. Albedo isn't cruel. He would have sympathy for someone like him who just wants to belong and is basically his sibling. He'd understand it since he experienced it. Therefore. No one was killed in the confrontation. Albedo never specified the death he felt grief over, but it must be subject three. The Albedo we met on the dragonspine who told us his story is the real albedo. Subject two is who we met in mondstadt (you're totally right that he wouldn't have made it there that fast). The behavior was too much different from Albedo. Thats my official theory. So even though this event gives people trust issues, I think both Albedo and Subject Two have come to an agreement and are existing amicably now.
